Jeff Kerkove’s Bowl of “What a Body Needs”

Jeff Kerkove knows a thing or two about going long – he was 5th across the DKXL finish line this year, and is currently out racing the Silk Road Mountain Race. Catching up with him isn’t always the easiest – he and wife Karen Jarchow stay busy with bikes and puppy Piney, but he was kind enough to share one of the meals he prepares, and consumes, often!
Jeff Kerkove’s Favorite Rice Bowl
Here is one of my go-to meals. It’s a rice bowl with eggs, bacon, mixed nuts, avocado and tomato. The reason it is a favorite is it’s quick and easy to make plus it has a lot of the nutrients the body needs post-work out.
Ingredients
2 cups of brown rice or rice of choice
2 scrambled eggs
2 slices of bacon
1 tomato
1/2 avocado
Salt or Bragg Liquid Aminos to taste
Handful of mixed nuts
then EAT!
